In less than a month our favorite championship begins, and I’m already testing some new recipes to enjoy at our soccer family cookouts. This year I’ll be preparing delicious and simple party food: Spicy Mac & Cheese Balls with Chorizo and Chile de árbol. A #GolazoKraft recipe, no doubts.

I went to Walmart and bought Capri Sun and all the ingredients for my Mac & Cheese balls as part of my #CollectiveBias assignment. With a box of Kraft Macaroni & Cheese I made 50 balls with two of my favorites ingredients and I added a cilantro alioli on the side to dip the balls. Just combine the pasta with the best flavors of your country, the flavors of the country of your favorite team, or a mix of everything to be fair with your friends and family if they have a favorite team different that yours. The game will do the rest.

People in Cuba follows more baseball than soccer, but my father was born in a tiny village in the center of the island called Zulueta, which is the exception. As I have no brothers, I was the one going with him to the stadium. Two of his best friends worked on the national team, one as a coach, and the other as a trainer. I recognize that we haven’t gone far as a team, but the passion for this sport is in our hearts, and we love to watch the games together while enjoying delicious tapas.

En menos de un mes comienza nuestro campeonato favorito y ya estoy preparando condiciones para disfrutar con la familia y los amigos de los partidos, y por supuesto, de los cookouts futboleros.

La gente en Cuba es más de béisbol que de futbol, pero mi padre nació en un pueblo pequeñito del centro de la isla llamado Zulueta que siempre fue la excepción de la regla y como no tengo hermanos, desde chica lo acompañaba a ver los juegos. Dos de sus mejores amigos han trabajado en el equipo nacional, uno de director y otro de entrenador. Reconozco que no hemos llegado muy lejos en las competencias, pero sí ha llegado lejos nuestra pasión por este deporte. Jamás me he perdido un campeonato mundial con mi familia y mis amistades.

Este año pienso prepararles bolitas de macarrones con queso, que se pueden hacer lo mismo dejando refrescar unos macarrones acabados de hacer que con sobras del día anterior. Ya pasé por Walmart y compré todos los ingredientes necesarios para ir practicando diferentes combinaciones. Las recetas suelen ser económicas y con una caja de macarrones con queso de Kraft salen 50 bolitas.

Un tremendo #GolazoKraft que me voy a anotar con mis invitados y que puedes anotarte tú también, combinando las pastas con los sabores preferidos de tu país, de la tierra de tus amigos, o de tu equipo favorito, creando unas bolitas únicas para encantarlos. Yo siempre tengo sentimientos encontrados con a qué equipo le voy, así que combino ingredientes de varios sitios y quedo bien con todos. Ya el juego se encargará del resto.

Kraft Macaroni and cheese with chorizoIngredientes

Para los macarrones con queso y chorizo:
1 caja de macarrones con queso de Kraft
1/2 taza de leche
2 cdas de mantequilla
1 o 2 chorizos molidos
1 pizca de chile de árbol en polvo (opcional)

Para hacer las bolitas, por taza y media de los macarrones con chorizo cocinados:
1 huevo
2 cdas de harina

Para empanizar las bolitas:
Harina multipropósito
Huevos
Pan rallado
Aceite vegetal para freír

Para el alioli rápido de cilantro:
6 cdas de mayonesa
2 diente de ajo
2 puñados de cilantro fresco

Preparación

Hierve 8 tazas de agua, agrega una cucharadita de sal y cocina los macarrones según las instrucciones del paquete. Escúrrelos bien y devuélvelos a la cazuela. Añade la leche, la mantequilla y el queso que viene en la caja de macarrones. Remueve bien todo y añade el chorizo y el chile. Deja que se refresquen, de modo tal que no te quemes al hacer las bolitas. Puedes usar sobras o hacerlos la noche anterior, refrescarlos y guárdalos dentro del refrigerador en un recipiente tapado.

Sigue las recomendaciones de las porciones de harina y huevo por porciones de macarrones de la lista de ingredientes a la hora de preparar la mezcla con la que harás bolitas de 1 y media pulgada de diámetro (4 cm) aproximadamente. Ve compactándolas a medida que les das forma y pásalas por harina, huevo y finalmente por pan rallado.

Calienta bien el aceite para freírlas, preferiblemente una cantidad que las cubra. Si tienes freidora, ajústala a 375°F (190°C) y fríe las bolitas en varias tandas, unos 2-3 minutos, hasta que se doren. Colócalas sobre papel toalla para eliminar el exceso de grasa. Son ricas bien calientes con el queso derretidito, pero también se pueden servir a temperatura ambiente.

Para preparar el alioli, machaca en un mortero el cilantro con el ajo y luego mézclalo bien con la mayonesa. Si no tienes mortero, puedes usar una batidora o un procesador de alimentos. Coloca un pequeño cuenco con esta salsa en la bandeja en la que sirvas las bolitas de macarrones con queso y cuando los lleves a tu mesa de centro, no te olvides las bebidas bien frías para acompañarlas. Mira que luego nadie quiere pararse a buscar nada, no vaya a ser que en ese momento llegue el gooooool. Si hay niños futboleros como lo fui yo en mi infancia, nada como los Capri Sun, y si son esos del envase de fondo transparente, tendrás otro #GolazoKraft asegurado.

Ingredients

For the Mac & Cheese with chorizo:
1 box of Kraft macaroni and cheese
1/2 cup milk
2 tbsps. butter
1 to 2 ground chorizos
1 pinch of powdered chile de árbol (optional)

To make the balls, for 1 ½ cups of cooked macaroni and cheese with chorizo:
1 egg
2 tbsps. flour

For breading the balls:
Multipurpose flour
Eggs
Breadcrumbs
Vegetable oil for frying

For quick cilantro aioli:
6 tbsps. mayonnaise
2 clove of garlic
2 handfuls of fresh cilantro

Method

Boil 8 cups of water, add a teaspoon of salt and cook macaroni according to package directions. Drain well and return them to the pot. Add milk, butter and the package of cheese that comes in the box of macaroni. Stir well and add chorizo and chile. Cool it in a bowl, so you don’t get burn when shaping the balls. You can use leftovers of macaroni and cheese or make them ahead and save them in a covered container.

Follow the recommendations on the list of ingredients to mix the macaroni portions with flour and eggs. Make 1 and a half inch diameter balls with it, compacting as you shape them. It’s not croqueta, some pieces can fall. Coat each ball with flour, battered eggs and breadcrumbs.

Heat oil in a large deep fryer to 375°F and fry the balls in batches for about 2-3 minutes, until golden. Place them on paper towel to remove excess of fat. You can serve them hot, with the cheese melting on every bite, but they are very good at room temperature too.

To prepare the aioli, crush cilantro and garlic in a mortar and mix well with mayonnaise. If you don’t have a mortar, you can use a blender or a food processor.

Place the sauce in a small bowl on the side of the Mac & Cheese balls when ready to take them to the coffee-table. Don’t forget the cold drinks, because no one likes to stop watching the game to get them, just in case the Gooooool arrives at that very moment. If you children are as futboleros as I was in my childhood, also grab their Capri Sun. To have an extra #GolazoKraft, look for the new clear bottom pouches.
